“YEMAX Ltd” is honoured to announce the establishment of its website. YEMAX is an Azeri (Turkic) word meaning “Food” or “To Eat”. In the word “YEMAX”, the letter “X” pronounces as “KH” in English, however, it is hard to master without lots of practice.
Our aim is to introduce Azerbaijani (Azeri) heritage to you, the reader. Azerbaijanis are one of the biggest tribes of the Turkic family. Turkic family is expanded from Sea of China to the heart of Arab Peninsula and from South Europe to the Kangar Golf (also known as Persian Golf/Arab Golf). We all are called Turks but nowadays for some mistakes made by politicians, Turks are limited to Turkey only, this is not correct. Turks have owned empires and states in East Turkistan, Kazakhstan, Turkmenistan, Dagestan, Chechnya, Afghanistan, Iran, Azerbaijan, Turkey, Cyprus, Iraq, Syria, Albania, Romania, Bulgaria, Ukraine, Greece, Russia and Georgia. Turkic civilisation is the oldest one known, going back to before 10000 BC.
Besides science, astrology, philosophy and mathematics,Turkic cuisine is also very reach, balanced and unique.
The entire world is benefitting from Turkic creations for centuries, people love to consume Yoghurt, eat Kebab, make Meatballs, enjoy Pilov, drink Ayran made using Kefir, enjoy Qurut, love Penyr (Cheese) bake many types of bread like Kuke, Pide, Lavash and Sengaih and also Turkic Pizzas. Lets not forget Turkic sweets and cakes and nuts.
Our vegetable pickling technic is one of the ancient food preservation technics; we call them Turshi (soured).
We preserve meat using special technics which involves frying and storeing in fat, extracting the moist and letting out every single air bubbles trapped in the pot.
We have been using pottery to store our pickle and dairy. From Kup and Berni to Seyin, From Godush and Kasa to Bardax, those are used by our ancestors, we use them now and they will be used by next generations.

Loads of Turkic dishes are famous in other cuisines. For example, Vine Leaf Dolma (Sarma to be correct) is now a traditional food loved by Greeks who call it Dolmades and unfortunately is advertised as their own!
Or, Qorma Sozi which is kind of Azeri Curry is owned by Fars people calling it Ghormeh Sabzi.

Lamb head and limbs, cow tongue, liver, lung, kidney, heart, balls, eyes and all edible organs of ship, caw, goat and birds are made in a way which makes them a masterpiece of fine cookery.
